Makanan bukan hanya kebutuhan dasar manusia, tetapi juga merupakan bagian penting dari identitas budaya dan kehidupan sosial. Salah satu contoh gastronomi perkotaan Jerman yang paling populer adalah Currywurst, yaitu hidangan tradisional berupa sosis yang disajikan dengan saus tomat berbumbu kari. Sejak diciptakan di Berlin setelah Perang Dunia II, Currywurst berkembang menjadi simbol kuliner yang mencerminkan sejarah, gaya hidup, dan keberagaman budaya masyarakat Jerman. Penelitian ini bertujuan untuk mengkaji peran Currywurst sebagai representasi gastronomi perkotaan Jerman serta menganalisis adaptasinya terhadap perubahan preferensi konsumen modern.Penelitian ini menggunakan pendekatan deskriptif kualitatif yang didasarkan pada studi pustaka dan analisis gastronomi. Pembahasan difokuskan pada latar belakang sejarah Currywurst, makna budayanya dalam komunitas perkotaan, tantangan yang muncul akibat globalisasi dan perubahan pola konsumsi makanan, serta berbagai inovasi yang mendukung keberlanjutan popularitasnya. Hasil penelitian menunjukkan bahwa Currywurst berhasil mempertahankan relevansinya melalui berbagai bentuk adaptasi, termasuk pengembangan alternatif berbasis nabati, peningkatan kualitas gizi, serta teknik penyajian yang lebih modern. Inovasi-inovasi tersebut memungkinkan Currywurst memenuhi tuntutan masyarakat kontemporer tanpa menghilangkan identitas tradisionalnya. Sebagai kesimpulan, Currywurst menunjukkan bagaimana suatu produk kuliner tradisional dapat beradaptasi dengan perubahan sosial, budaya, dan teknologi tanpa kehilangan nilai sejarah maupun budayanya. Kemampuannya dalam memadukan tradisi dan inovasi telah memperkuat posisinya sebagai salah satu simbol gastronomi Jerman yang paling dikenal di era modern.

Abstract
Food is not only a basic human necessity but also an important part of cultural identity and social life. One of the most popular examples of German urban gastronomy is Currywurst, a traditional dish consisting of sausage served with curry-flavored tomato sauce. Since its creation in Berlin after World War II, Currywurst has developed into a culinary symbol that reflects the history, lifestyle, and cultural diversity of German society. This study aims to examine the role of Currywurst as a representation of German urban gastronomy and to analyze its adaptation to the changing preferences of modern consumers. This study uses a descriptive qualitative approach based on literature review and gastronomic analysis. The discussion focuses on the historical background of Currywurst, its cultural significance in urban communities, the challenges posed by globalization and changing food consumption patterns, and the innovations that support its continued popularity. The findings show that Currywurst has successfully maintained its relevance through various adaptations, including the development of plant-based alternatives, improvements in nutritional quality, and modern presentation techniques. These innovations allow Currywurst to meet contemporary demands while preserving its traditional identity. In conclusion, Currywurst demonstrates how a traditional culinary product can adapt to social, cultural, and technological changes without losing its historical and cultural value. Its ability to combine tradition with innovation has strengthened its position as one of the most recognizable symbols of German gastronomy in the modern era.
